Hummus Greek Salad

Here in Michigan we have an abundance of Coney Island restaurants. Each one is a little different, but they all serve pretty similar food. They’ll have coney dogs of course, which is a hot dog with chili, mustard, and diced onions. They’ll also have lots of Greek inspired foods like gyros, Greek salads, saganaki, and more. No matter where you go in the metro Detroit area, you won’t be far from a Coney restaurant.

There are a few that my husband and I eat at on a regular basis. Our go-to meal is usually a Greek or Caesar salad with chicken. Last year we discovered a new twist on a salad we love from a place called Greek Islands – the Hummus Greek Salad. It’s basically a warm piece of pita bread spread with hummus, then piled high with a Greek salad and topped off with grilled chicken. And yes, it is just as amazing as it sounds.

Naturally, we had to try our hand at making these ourselves, and I’m happy to share that they came out perfectly! It’s super easy to throw together, and an interesting twist on a regular grilled chicken salad. The great thing about this kind of food is that it’s also super easy to make vegetarian. Just swap out the chicken for some garbanzo beans and you’ve got an incredibly filling and flavorful meatless dinner. Perfect for a light and fresh summertime meal!

Ingredients

  • 2 Greek pitas
  • 1 chicken breast
  • Hummus
  • Romaine lettuce, chopped
  • Grape tomatoes, diced
  • Cucumber, diced
  • Red onion, thinly sliced
  • Crumbled feta cheese
  • Kalamata olives
  • Pepperoncini peppers
  • Greek dressing (I like this stuff)

 

Directions

There aren’t a whole lot of steps to follow for this recipe. Basically just cook the chicken and then assemble the salads.

I really don’t have a special way that I make the chicken. I do it differently depending on how I feel and what ingredients I have. Sometimes I will marinate the chicken in some of the Greek dressing overnight and then throw it on the grill the next day. This time, I just diced the chicken, seasoned it with a little Mrs. Dash Garlic & Herb, and then sauteed it in a skillet with some olive oil.

Once the chicken is cooked, spread some of your favorite hummus on top of each pita. I always look for the Greek style pitas at the grocery store. They are softer and closer to what the restaurant uses.

Here is what they look like (I found these at Kroger) –

On top of the pitas, pile on the romaine lettuce, red onion, cucumber, tomatoes, olives, and pepperoncini. Drizzle the Greek dressing over the salad, then top with grilled chicken and some crumbled feta. If you aren’t a fan of any of these ingredients, you can easily leave them out. I love recipes like this that can be easily adapted to fit different tastes and dietary preferences.

It’s that simple, guys! No need to turn on the oven or spend hours in the kitchen. All of the ingredients can be prepped in advance, saving you so much time on busy weeknights.
