If you’ve ever eaten at Panera Bread, you’ve probably tried or at least heard of their Mediterranean veggie sandwich. It’s been on the menu forever. In fact, I believe this may have been the first sandwich I ever tried from Panera. Over the years it has become my go to sandwich, and to this day I still find myself craving it on a regular basis.

One day, the mood struck me to find a homemade version of this recipe. At first I thought I’d never be able to duplicate this at home. I figured there had to be some super secret ingredient in there that nobody would be able to figure out. The truth is, I think this homemade version is just as good as the restaurant version!

After looking at the ingredients listed on their menu, I discovered that they use Peppadew peppers* on their sandwich. I had never heard of these before, so I did some research and found out that Peppadew is a brand name for a type of sweet pepper grown in South Africa. I was able to find them at Busch’s, which is a local grocery chain in my area. You may also be able to find them at Whole Foods. Another spicier option would be the hot & sweet cherry peppers from Trader Joe’s (they come in a jar). I have used these and they work as well.

The next important ingredient on the list is the cilantro jalapeno hummus. This is really what gives the sandwich such a unique taste. Trader Joe’s sells this stuff already made, and it’s awesome. This is the only place I have been able to find a premade cilantro jalapeno hummus. You could certainly make your own if you wanted to, but I think you will be just as happy with the store-bought stuff.

Panera also uses their tomato basil bread for this sandwich. For the sake of convenience, I just used a sturdy whole wheat bread that I picked up at Trader Joe’s, which worked just as well for me. You could always buy a loaf of bread from Panera if you really wanted it to be authentic..

This Mediterranean veggie sandwich recipe tastes just like what you would get at Panera Bread. Made with cilantro jalapeno hummus and fresh veggies.

  • 2 slices sliced whole wheat or tomato basil bread
  • cilantro jalapeno hummus
  • 1 romaine lettuce leaf
  • tomato, sliced
  • cucumbers, sliced
  • peppadew peppers or Trader Joe's hot & sweet cherry peppers, cut into small pieces
  • red onion, thinly sliced
  • feta cheese, crumbled


  1. Spread a generous amount of hummus over both slices of bread, then layer the sandwich with lettuce, one row of sliced tomatoes, one row of sliced cucumber, peppers, red onion, and feta cheese. 

I cannot even explain how much I love this sandwich. I probably eat my homemade version once a week now. It makes for an incredibly filling and satisfying lunch. I look forward to this all morning when I know it’s waiting in the fridge for me.

Another great thing about a sandwich like this is you can add as many veggies as you want! Load it up with all of your favorites or remove whatever you don’t want. It’s up to you! If you want to make this vegan, simply leave out the feta cheese and make sure you are using a vegan bread. Then pair it with my favorite vegan creamy tomato soup. Yum!
