Can you believe the fourth of July is next week? I’m pretty sure I say this every year, but summer is going by way too fast! The fourth of July is definitely the ultimate summer celebration for me. We’re usually at the lake, grilling outside, playing in the water, soaking up the sun, and watching fireworks. It’s basically everything summer should be squeezed into one day.
In honor of Independence Day, I decided to create these red, white, and blue mason jar parfaits. I’ve been eating lots and lots of chia seeds lately in the form of chia pudding and strawberry chia jam. Finally I decided to incorporate both into one recipe by creating a chia pudding parfait. These parfaits are layered with strawberry chia jam, Greek yogurt, and coconut chia pudding. Top them with fresh blueberries and you’ve got yourself a perfectly patriotic treat for serving up on the fourth!
So what is chia pudding? Well, if you’ve ever made overnight oats, it’s a similar process. Basically you mix chia seeds and milk of your choice together and let it refrigerate for several hours or overnight. The chia seeds will absorb the milk and form a pudding-like consistency. Just like overnight oats, you can add just about anything to create all sorts of flavors.
Guys, the chia jam is what makes these parfaits. Have you tried chia jam yet? It’s seriously my new obsession. You can use any berry, but strawberry is my current favorite. It’s just as good if not better than regular jam and so much healthier for you. All you need are fresh strawberries, chia seeds, a touch of maple syrup to sweeten, a tiny bit of lemon juice, and a dash of cinnamon. That’s it! I make it all the time for these parfaits, but it’s also divine spread on top of some homemade biscuits or scones. Seriously, the next time you want to impress some guests, offer them some homemade scones with this strawberry jam. It will be devoured!
Assembling the Parfaits
I always start with a layer of chia jam, then a layer of plain Greek yogurt, some coconut chia pudding, and then repeat. Top with fresh blueberries, strawberries, coconut flakes, or whatever your heart desires!
My recommendation is to always layer the strawberry jam underneath of the yogurt because the taste of the two mixed together is heavenly. I try to get a little bit of both in each bite. I just used plain Fage Total 0% yogurt, but you can always use vegan yogurt or another yogurt of your choice.
Printable recipes for the chia pudding and chia jam are posted below. You should have enough to make about two or three parfaits depending on how big of a jar you use. It’s super easy to double the recipe if you want to make extra.
Coconut Chia Pudding
- 1/2 cup chia seeds
- 2 cups coconut milk (not the canned stuff)
- 2 tbsp maple syrup
Mix all ingredients in a bowl. Cover and refrigerate overnight. You may need to stir the pudding after a couple of hours to make sure you have an even consistency.
Strawberry Chia Jam
- 16 oz fresh strawberries
- 2 tbsp maple syrup
- 1-2 tbsp chia seeds
- 1/4 tsp lemon juice
- 1/4 tsp cinnamon
Cut the strawberries into quarters. Place in a medium saucepan with maple syrup.
Bring to a simmer for a few minutes until strawberries start to soften.
Begin mashing strawberries with a wooden spoon or rubber spatula until you reach the desired consistency.
Stir in chia seeds, lemon juice, and cinnamon.
Simmer for a few more minutes until the jam starts to thicken.
Let cool before serving. You can also run it through a food processor if you'd like a smoother texture.
